Vadalia Onion Pie Recipe

Ingredients
  • 1 package Ritz crackers, crushed
  • 1/4 cup butter or margarine, melted
  • 3 1/2 - 4 cup vadalia onions sliced 1/4 inch thick
  • 2 tablespoons butter or margarine
  • 2 Eggs
  • 1/4 cup evaporated milk
  • 3/4 cup shredded cheddar cheese
Directions
Mix ground up crackers and melted butter or margarine. Pack into 9" pie pan on bottom and sides. Set aside.

Sauté onions till clear in remaining butter or margarine. and let cool.

Beat eggs with evaporated milk.

Pour cooled onions into pie dish and cover with egg/milk mixture. Sprinkle shredded cheese over top and bake at 350° for 45 minutes.
