Lentil Vegetable Soup 2 Recipe

Ingredients
  • 2 cups lentils
  • 1/2 cup chopped onion
  • 1/2 cup chopped celery
  • 1/4 cup chopped carrots
  • 3 tablespoons parsley
  • 1 clove minced garlic
  • 2 1/2 teaspoons salt
  • 1/4 teaspoon pepper
  • 1/2 teaspoon oregano
  • 1 can tomatoes (1 lb can)
  • 2 tablespoons wine vinegar
Directions
Rinse lentils, drain and place in soup kettle/add 8 c. water and all ingredients [except tomatoes and vinegar]. Cover and simmer 1 1/2hr.

Add tomatoes and vinegar/simmer covered for 30 minutes more.

Season to taste.
