PASTA PRIMAVERA SALAD Recipe

Ingredients
  • 2 cups cooked tricolor rotelli (cooked without salt or fat)
  • 2 cups fresh broccoli florets
  • 3/4 cup cubed part skim mozzarella cheese
  • 3/4 cup peeled, seeded cucumber slices, halved
  • 3/4 cup diced red bell pepper (1 medium)
  • 1/2 cup sliced purple onion
  • 2 tablespoons chopped green onions
  • 1 tablespoon minced fresh parsley
  • 6 cherry tomatoes, quartered (small)
Directions
Mix all ingredients.
