French Market Soup Recipe

Ingredients
  • 1/4 cup Red Beans
  • 1/4 cup Pinto Beans
  • 1/4 cup Lentil Beans
  • 1/4 cup Black Eyed Peas
  • 1/4 cup Garbanzo Beans
  • 1/4 cup Black Beans
  • 1/4 cup Navy Beans
  • 1/4 cup Baby Lima Beans
  • 1/4 cup Split Peas
  • 1 tablespoon salt
  • water
  • 1 pound ham, diced
  • 2 bay leaves
  • 2 teaspoons thyme
  • 3 stalks celery, diced
  • 1 bell pepper, diced
  • 2 onions, diced
  • 1 quart whole tomatoes with juice
  • salt and pepper, to taste
  • 2 tablespoons parsley
Directions

Wash and drain beans. Soak overnight in salt and enough water to cover.

Drain and rinse beans. Add 2 quarts water, ham, bay leaves and thyme. Simmer covered for 3 hours.

Remove from heat and add celery, bell pepper, onion and tomatoes. Salt and pepper to taste. Return to stove and simmer 1 1/2-2 hours.

Add parsley and serve.
