Sunshine Gelatin Mold Recipe

  • 2 packages each) lemon gelatin (3 ounce pkg)
  • 1 cup boiling water
  • 1 quart vanilla ice cream, softened
  • 1 can mandarin oranges, drained (11 ounce can)
  • 1 can unsweetened pineapple, drained (8 ounce can)
In large bowl dissolve gelatin in boiling water. Whisk in ice cream until melted. Stir in fruit. Pour into 6 cup ring mold coated with cooking spray. Refrigerate 2 hours or until firm. Unmold onto serving platter.
