Spinach Summer Salad Recipe

This salad has an Asian flair to it with green onions, mandarin oranges and almonds. The homemade dressing is perfectly sweet and tangy.

Ingredients
  • 1 package spinach mix
  • 1 pint grape tomatoes, halved
  • 1 cucumber or English cucumber, chopped
  • 1 bunch green onions, chopped
  • 1 can mandarin oranges, drained (16 ounce can)
  • 1 package honey roasted sliced almonds
  • 1 packet Splenda
  • 1 teaspoon salt
  • 1 pinch pepper
  • DRESSING:
  • 1 tablespoon honey
  • 4 ounces rice wine vinegar
  • 2 tablespoons olive oil
Directions
Cut grape tomatoes in half. Chop green onions from white end up green stalk 1/4 of the way. Chop cucumber into 1/2-1/4 inch pieces, with or without skin. Add Splenda, salt and pepper to tomatoes, green onions and cucumber mix, toss and set aside for 20-30 minutes. This process creates its own juices to add to the dressing.

For dressing, combine honey, vinegar, and oil in small bowl or container.

When ready to serve, toss spinach, mandarin oranges and other vegetables, add dressing mixture and toss again. Lastly, add almonds and serve.
