Edamame Salad 2 Recipe

  • 1 package 10-12 ounce frozen shelled edamame (soybeans inch the pod)
  • 1 can mandarin oranges, drained and roughly cut inch half (small can)
  • 1/4 cup diced red onion
  • 1/2 cup diced red bell pepper
  • Dressing
  • 2 tablespoons rice wine vinegar
  • 3 tablespoons canola oil
  • 1 tablespoon soy sauce or tamari
  • 1 each grated ginger and orange rind (1/2 teaspoon each)
  • 1/4 cup torn cilantro
Boil, drain and cool edamame according to package directions. Combine edamame, mandarins, onion and bell pepper. Mix dressing and sprinkle with cilantro and orange rind.
