Sour Sweet Beets Recipe

Ingredients
  • 1 cup 90 grain vinegar
  • 2 cups sugar
  • 3 cups beet water, strained from boiled beets
  • 1 teaspoon canning salt
  • Beets
Directions
Cook beets until tender, then peel. Put brine solution ingredients in a pot and bring to a boil. Put peeled beets in solution and cook 3 minutes. Fill jars with beets and brine solution. Seal jars tightly.
