Ingredients
  • 6 cups rolled oats
  • 1/2 cup wheat germ
  • 1 cup unsweetened coconut
  • 1/4 cup sesame seeds
  • 1/2 cup sunflower seeds
  • 1 cup nuts (optional)
  • 1 teaspoon cinnamon
  • 2 teaspoons nutmeg
  • 1 cup vegetable oil
  • 1 cup honey
  • 1 cup raisin or other dried fruit (optional)
  • 2 tablespoons vanilla extract
  • 1 teaspoon almond extract (optional)

Mix grains, coconut, seeds, nuts and spices together.

Pour oil and honey over the top. Mix thoroughly.

Spread on lightly oiled cookie sheet and bake 300 for 30 minutes or until golden brown, stirring occasionally while baking.

Take out of oven, mix in raisins and extracts. Return to oven and bake 5-10 minutes more.

Remove from oven and put in air tight container for up to 1 week.

"Pretty good granola. It was hard to find 'unsweetened coconut' but found it in the health food section. I used sliced almonds and added the raisins. Great for parfaits. It makes alot though so be sure you can eat it up in a week."
