Chicken Cordon Blue 5 Recipe

  • 4 chicken breasts, deboned, skinned and pounded flat
  • 4 Swiss cheese, thin sliced
  • 4 slices boiled ham
  • flour
  • 1 egg, beaten
  • bread crumbs
  • SAUCE:
  • 1 1/2 cups butter, melted
  • 1 tablespoon flour
  • 1 tablespoon parsley
  • 1/2 cup milk
  • 1/2 teaspoon thyme
  • 1/2 teaspoon marjaram (optional)
  • 2 tablespoons white cooking wine
Layer Swiss cheese and ham on chicken breasts and roll up jelly roll fashion.

Dip in flour, then in beaten egg, and finally in bread crumbs. Secure with toothpicks.

Bake uncovered in a buttered baking dish at 350° for 35-40 minutes.

For the sauce, melt oleo. Add flour and cook 1 minute. Stir in remaining ingredients.

Serve sauce with chicken.
