Curried Chicken in wonton cups Recipe

  • 1 package egg roll wrappers
  • 2 cups cubed chicken
  • 1 unpeeled red apple, chopped (medium)
  • 3/4 cup dried Cranberries
  • 1/2 cup thinly sliced celery
  • 1/4 cup chopped pecans
  • 2 tablespoons thinly sliced green onions
  • 3/4 cup mayonnaise
  • 2 teaspoons lime juice
  • 1/2 teaspoon curry powder
Spray Pam into muffin pan or mini muffin pan.

Place 1/2 of egg roll wrapper (should be a square) into each muffin spot. Cook in preheated oven for 5 minutes. Should be golden. Cool..place in closed container until ready to fill.

Combine chicken, apple, cranberries, celery, pecans and green onions. In another bowl combine mayonnaise, lime juice and curry powder. Add to ckicken mixture and stir to coat. Cover and refrigerate until ready to serve.

When ready....scoop out chicken mixture into wonton. Can add dash of curry powder on top.
