Peeling hard boiled eggs can sometimes be a tedious job. Also note that very fresh eggs are more difficult to peel than older eggs. To make it simple to peel a hard-boiled egg, simply roll it over a hard surface, using light pressure. This will crush the shell into small pieces, making it easier to remove. It may seem like this would make it worse because you would have smaller pieces to remove but the small pieces cling to the thin layer surrounding the hard boiled egg white. This layer is removed as you are peeling the egg, allowing the little pieces to come off in a sheet-like layer. See
