Grill or Roasting Wok Glossary Term

A traditional Asian cooking vessel shaped like a large low bowl with two handles. Modern woks are usually made from steel or aluminum. They heat food such as meats and vegetables quickly and evenly and are excellent for stir-frying food with a minimum of oil. Food is easily tossed in the wok to ensure even cooking. Typical Grill and Roasting Woks are made from porcelain enameled steel that is formed into square or round metal shapes with perforated holes on the surface for cooking various ingredients on outdoor grills. There are several types of Grill Woks available for use. One is made similar to a bowl Wok with slanted sides and an open center. Another type of Grill Wok, referred to as a Vertical Roasting Wok, is designed with a center container for holding basting liquids. The core container enables poultry to be basted from the inside out, adding moisture and flavors as the poultry cooks. As the food cooks, the basting liquid not only moistens the poultry but also drips onto the surrounding vegetables or other ingredients to enhance the flavors of other items being cooked. The Vertical Roasting Wok is often used to prepare a popular grilled item known as "Beer Can Chicken."

pulav masala Glossary Term
A mix of mild spices from India that are used to flavor a variety rice and dal dishes. Ingredients commonly found in Pulav Marsala include coriander, cloves, black pepper, cinnamon, Cassia, NaagaKeshar (Naaga Sagaralu), Badal Phool (star anise), Shahjeere, masala cardamom, and salt.
chat masala Glossary Term
A mix of hot spices common in India that are used to flavor a variety of appetizer-like foods, fruit salads, fresh fruit, fruit juices, or vegetable salads.
lime pickle relish Glossary Term
Most often, this condiment is a traditional relish used to flavor food dishes in India where pickles so frequently are served during meals.

A vegetable bird nest is made in the same manner as a noodle bird nest. Shredded vegetables, such as carrots, potatoes, and parsnips, are placed in the bottom of a bird nest basket.

A bird nest is a deep fried nest typically made of noodles or shredded vegetables. The noodles or vegetables are placed in the bottom of a bird nest basket and then a smaller bird nest basket is placed on top of the food and pressed down to flatten the food to form a shape of a basket.

A cake similar to a coffee cake in that it has a moist cake bottom and a streusel topping. The main difference between the two is that the majority of the crumb cake is the crumb topping, whereas the coffee cake is more cake with a much smaller amount of topping.

A white powder made for use as a leavening agent which is added as an ingredient when preparing many different types of baked goods that will have thin shells or crusts such as puff pasteries, flat breads, crackers, and some cookies.

Most often used as a storage utensil to keep foods and beverages properly cooled to keep food from spoiling and to keep beverages refreshing.

Originating in South America, this wood burning device was initially developed to provide heat and a means to cook food within homes; however, it is also commonly used outdoors in gardens and other areas to provide an outdoor fireplace as well as a cooking oven.
can cover or keeper Glossary Term
A kitchen utensil designed to keep carbonated can contents from spoiling or losing their fizz. Beverages such as beer or soda that are traditionally sold in 12 ounce cans can use a Can Cover or a Can Keeper to prevent the fizz from escaping the can.
can strainer Glossary Term
Most often designed to fit a variety of can sizes, this type of Strainer is made to easily seperate liquid substances from the food contents in a can.
mother of vinegar Glossary Term
A thick, gelatin substance containing bacteria that forms in vinegar most often when the vinegar warms to temperatures between 60ºF to 85ºF.

A type of food introduced by the French population living in Canada that is considered to be a snack or junk food creation.

A type of Tuna that may be referred to as Oceanic Tuna or Bonito Tuna that comes from the Atlantic and Pacific oceans.
