A firm-textured white cheese traditionally found in Caribbean or Mexican countries. This cheese has a strong flavor and somewhat mildly smoked taste. Similar to a Cotija cheese, it grates well and can be served as a topping or an ingredient for chili, enchiladas, pasta, or refried beans.
