I would also recommend not draining too much of the grease prior to putting in the onions, garlic, and peppers as the oil in the chorizo imparts a great flavor. This oil can even be put in with the rest of the ingrediants to impart more flavor and then later skimmed if desired.

We have tried it with crab instead of the shrimp and have tried it without seafood as well. Both are also very good.
