  • 1 tablespoon butter
  • 1 cup fresh mushrooms, chopped
  • 1/4 cup onion , chopped
  • 4 garlic cloves , minced
  • 1 tablespoon lemon juice
  • 1/4 cup fresh rosemary , minced
  • 1/3 cup grated Romano cheese
  • 1 egg yolk
  • 3/4 teaspoon pepper
  • 1 teaspoon salt
  • 3 pounds pork loin
  • 1/4 cup Dijon mustard
Directions
  • For filling, in saute pan cook mushrooms and onion in butter over medium-low heat until tender, stirring frequently. Add garlic and cook 1 minute more. Remove from heat, stir in lemon juice, rosemary, egg yolk and cheese; set aside.
  • Butterfly the pork loin by cutting through roast horizontally to within 1/4-inch of the other side. Do not cut all the way through. Open out and pound to roughly a 6x8-inch rectangle.
  • Spread filling evenly onto meat. Season with the salt and pepper. Roll up lengthwise; tie with kitchen string at 1 to 2 inch intervals to secure.
  • Rub Dijon mustard over the pork loin. Place it in shallow pan and roast in a 350 degrees F. oven for 45 to 50 minutes or until internal temperature reaches 155 degrees F.
  • Remove from oven, let rest for 10 minutes. Remove string and slice to serve.

  • 2 pounds small red potatoes, scrubbed and cut in half (do not peel)
  • 3 tablespoons olive oil, more if desired
  • SEASONINGS TO TASTE:
  • Garlic salt
  • Fresh ground pepper
  • Salt
  • Dried rosemary, crushed
  • Dried parsley
  • Dried or fresh minced garlic
Directions
  • Preheat oven to 425 degrees F.
  • Fill large bowl with cut potatoes.
  • Drizzle oil and seasonings over potatoes, stir to coat.
  • Place potatoes in a single layer on a foil lined baking sheet, which has had the foil sprayed with non-stick cooking spray.
  • Bake uncovered 40 to 45 minutes, turning half way through baking time. Baking time may vary depending on the size of the potatoes.
  • Potatoes should be a light golden brown and tender.
  • Serve warm.
  • Experiment with other seasonings if desired.

  • 1 head Romaine lettuce (large head)
  • 1 can anchovies, minced
  • 3 cloves garlic, minced
  • 1 tablespoon Worcestershire sauce
  • 1 lemon
  • 1/3 cup extra virgin olive oil
  • 1/4 teaspoon black pepper
  • 1/2 cup Parmesan Cheese
  • 1 cup croutons
Directions
Cut romaine into bite-sized pieces.

Drain anchovies, reserving oil from the can. Mince and combine anchovies and garlic in a large bowl, mash with the back of the wooden spoon, stir in Worcestershire sauce and the juice of one lemon. Add olive oil to reserved anchovy oil to make 1/3 cup combined oil; whisk into anchovy-garlic-lemon mixture. Toss with Romaine lettuce.

Toast croutons just before tossing with salad and just before serving. Serve with freshly shaved Parmesan cheese and plenty of ground black pepper.

Directions
  • Mix cake according to package directions and stir in chocolate chunks. Pour into bundt pan, or desired pan, and bake according to package directions.(If using a bundt pan, cook for 35 minutes on 350°F)
  • Let cool completely.
  • In medium bowl, pour caramel chocolate chips, add 3 tablespoons margarine. Microwave on high for 30 seconds, stir to combine (If needed, microwave 30 more seconds to melt all chips.) Add milk; stir to blend well.
  • Pour glaze over cooled cake.
  • Slice and enjoy!

  • 7 ounces canned corn, drained
  • 1 teaspoon ground cumin (adjust to taste)
  • 1 teaspoon dried oregano
  • 1/4 teaspoon ground thyme
  • 3/4 teaspoon salt (adjust to taste)
  • 1/4 teaspoon coarse ground black pepper (adjust to taste)
  • 2 cups cooked rice
  • 19 ounces canned black beans, drained
Directions
  • Prepare rice according to directions on box.
  • In a large skillet, cook sliced sausage* over high heat until browned, stirring several times to avoid burning.
  • Remove sausage from pan and add oil, onions, zucchini, peppers, garlic, corn, and dry seasonings. Cook for 5 to 7 minutes over medium heat, stirring frequently.
  • Add cooked rice and the beans, continuing to cook until all ingredients are hot.
  • Remove from heat and add sausage. Season to taste and serve.

  • Spread caramel sauce over top. Spread cool whip over this.
  • Chop Butterfinger candy bars (6 small candy bars that are about 2" long) and sprinkle over top.
  • Put in freezer for at least 2 hours before serving.

  • 1 cup sour cream
  • 1/4 cup horseradish
  • 2 teaspoons Dijon mustard
  • 2 green onions - finely chopped
  • AU JUS:
  • 1/2 pound stew beef
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1/4 cup flour
  • 1 tablespoon vegetable oil
  • 1 cup onion - finely chopped
  • 1 clove garlic - chopped
  • 2 teaspoons tomato paste
  • 28 ounces beef broth - low sodium or regular
  • 28 ounces beef broth - seasoned
  • 1 teaspoon Worcestershire sauce
  • 1 bay leaf
  • SANDWICH:
  • 1 1/2 pounds roast beef - deli style
  • 6 hoagie buns
Directions
  • Season stew meat with salt and pepper.
  • Dredge the pieces in flour, coasting all sides.
  • Heat oil in a dutch oven or saucepan on medium-high heat.
  • Add prepared stew meat and brown on all sides. When the meat is all browned, add the onion, reduce heat to medium-low and cook until the onions are tender and starting to caramelize - approximately 10-15 minutes.
  • Add garlic and tomato paste, cook for 3 minutes.
  • Add the beef broth, Worcestershire sauce and bay leaf. Cover and simmer for 20 minutes.
  • Remove the cover, increase the heat to medium and simmer another 25-30 minutes. The broth will reduce to about 3 cups.
  • Taste the broth, add salt if needed.
  • Strain the broth, discard the bay leaf and reserve the meat for another recipe. The meat would be great in a bbq beef sandwich or on top of egg noodles.
  • To assemble the sandwiches, split the rolls horizontally, but do not cut all the way through.
  • Place in the oven just until warmed all the way through, approximately 5 minutes at 325°F.
  • Add the sliced, deli style beef to the au jus in the sauce pan until warmed through.
  • Remove the beef from the au jus and divide it up amoung the warmed rolls.
  • Keep the sauce warm and pour into individual cups for serving.
  • Add horseradish sauce or sliced cheese to the sandwiches if desired.

  • 1/2 cup cornmeal enough to sprinkle pans and on top of dough
  • 6 cups flour
  • 2 packages active dry yeast
  • 1/4 teaspoon baking soda
  • 2 cups milk
  • 1/2 cup water
  • 1 tablespoon sugar
  • 1 teaspoon salt
Directions
  • Grease 2 pans lightly. Sprinkle with cornmeal to coat the bottom and sides of the pan and set aside.
  • In a large bowl, combine 3 cups of flour, yeast and baking soda. Set aside.
  • In a medium saucepan, heat and stir milk, water, sugar and salt just until warm (120°-130°F.)
  • Using a wooden spoon, stir the milk mixture into the flour mixture.
  • Stir in the remaining 3 cups of flour.
  • Sprinkle a work surface with a little flour, dump the dough out and finish incorporating the ingredients with your hands.
  • Divide the dough in half and place each in a prepared bread pan.
  • Sprinkle the tops with some more cornmeal.
  • Cover with a damp cloth and allow it to rise in a warm setting until it is doubled in size, approximately 1 hour.
  • Preheat the oven to 400°F.
  • Bake approximately 25 minutes or until golden. The dough will not rise to the top.
  • Immediately remove from the pans and cool on a wire rack.

  • 4 skinless, boneless Chicken Breasts (about 1 1/2 pounds) thinly sliced
  • 1/2 cup All Purpose Flour
  • 1/2 teaspoon kosher salt
  • 1/8 teaspoon freshly ground pepper

  • 3 tablespoons water
  • 1/4 cup extra-virgin Olive Oil
  • 1 lemon
  • 1/2 cup Dry White Wine (optional)
  • 1 cup low-sodium Chicken Broth
  • 2 tablespoons butter , unsalted
  • 1/4 cup chopped flat-leaf Parsley
Directions
  • Put some flour in a shallow platter and season with salt and pepper. Mix with a fork to distribute evenly throughout.
  • In a bowl, beat the eggs with 3 tablespoons of water. In a large skillet, heat the oil over medium-high heat
  • Dredge both sides of the chicken in the seasoned flour and then dip them in the egg mixture to coat completely, letting the excess drip off.When the oil is hot, add the chicken and saute for 2 minutes on each side until golden, turning only once. Once done, move the chicken to a large platter in a single layer to keep them warm.
  • Slice ½ the lemon into this slices and cook them in the pan for 1 to 2 minutes. Add the wine (if using â€" or substitute water), chicken broth and juice from other ½ of the lemon and simmer for 5 minutes to reduce the sauce slightly.
  • Roll the butter in some flour and add to the skillet, this will thicken the sauce. Stir to dissolve the flour. Reduce the heat to medium low and add the chicken back to the skillet. Place the lemon slices on top of the chicken and cook for 2 minutes. Season with salt and pepper and top with chopped parsley before serving.


Notes & Suggestions
If you do not have thin sliced chicken, simply lay a piece of plastic wrap over the chicken and pound with a flat meat mallet until they are about ¼ inch thick.

Break vermicelli in small pieces and add to pan and cook until golden brown, stirring constantly.

Add rice and stir until rice is well coated with butter.

Boil broth and add boiling broth to rice mixture. Season to taste. Cook, covered, over low heat until liquid is absorbed, about 25 minutes.

Stir lightly with fork. Let stand in warm place about 10 minutes before serving.

Directions
Cook broccoli.

Mix cheese with broccoli. Place in casserole dish.

Melt margarine and mix with crushed Ritz crackers. Spread crackers over broccoli mixture.

Bake covered at 325° for 25 minutes. The last 10 minutes, the dish should NOT be covered.

  • 1/2 cup carrot - shredded
  • 1 tablespoon fresh parsley - chopped
  • 1 tablespoon onion - chopped
  • 1 teaspoon lemon pepper
  • 1 loaf Ciabatta bread - cut in half horizontally
  • 8 ounces Swiss cheese - sliced
Directions
  • Empty tuna into small bowl. Mix together with mayonnaise, radishes, and pickles. Set aside.
  • In other small bowl, mix together chopped cucumber, carrots, parsley, onion, and lemon pepper. Set aside.
  • Butter outside of bread, both top and bottom halves.
  • On bottom half of bread, place 1/2 the slices of Swiss cheese, then tuna mixture, then cucumber mixture, then rest of the Swiss cheese.
  • Put top half on sandwich. Wrap in large sheet of aluminum foil, sealing.
  • Place directly on preheated grill over medium heat.
  • Set a brick or heavy heatproof object on top of sandwich while cooking.
  • Turn sandwich over after 5-7 minutes and place brick on top again, grill another 5 minutes or until nicely browned and cheese is melted.
  • Serve warm.

  • 1/2 cup flour
  • 1 onion - medium, diced
  • 2 garlic cloves, chopped

  • 1 rosemary sprig, stemmed and chopped
  • 3 cups chicken broth - canned or homemade
  • 29 ounces tomato sauce
  • 29 ounces tomato - diced, with oregano, basil and garlic
  • 2 dashes of favorite hot sauce, more if desired
  • 1/4 cup honey
  • 1 tablespoon dill weed, dried
  • 1/2 teaspoon pepper
  • 1 teaspoon chili powder
Directions
  • In dutch oven, melt 5 1/2 tablespoons butter over medium heat. When melted, whisk in flour, continually whisking until smooth. Remove from heat.
  • In small skillet, melt the rest of the butter. Sauté the onion and garlic over medium heat for 2-3 minutes. Add the fresh basil and chopped rosemary. Sauté 2-3 more minutes.
  • Return dutch oven with flour mixture to medium heat on stove. Add in the onion mixture. Stir to combine. Slowly add chicken broth, 1 cup at a time, stirring continuously and allowing sauce to thicken slightly.
  • Continue adding broth until all is incorporated and thickened.
  • Begin adding the tomato sauce and diced tomatoes, stirring continuously, allowing mixture to thicken.
  • Season with hot sauce, honey, dill weed, pepper, chili powder. Stir to combine.
  • Serve hot with Italian popcorn or croutons.
NOTE: Can be made ahead; just reheat on low heat, stirring frequently.

  • 4 eggs, beaten
  • 1 cup seasoned Italian style breadcrumbs
  • 1/2 cup Parmesan cheese

  • 1 lemon, sliced
Directions
Preheat oven to 350°. Spray a baking sheet with cooking spray; set aside.

In a shallow dish, beat eggs. In another shallow dish, combine breadcrumbs, cheese, pepper and parsley. Dip both sides of fillets into eggs, then breadcrumb mixture. Place on baking sheet, and drizzle melted butter over breaded fillets.

Bake for 7-10 minutes, until internal temperature of 160°. Garnish with lemon slices, if desired.

  • 1 can chicken broth
  • 2 1/4 cups water
  • 1 pound frozen peas
  • 1 tablespoon olive oil
  • 2 cups rice
  • 1/2 cup Parmesan cheese, grated
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
Directions
In 2-quart covered saucepan, heat chicken broth and water to boiling on High.

Meanwhile, in large microwave-safe bowl, place peas and 2 tablespoons broth mixture; cover with vented plastic wrap and microwave on High for 4 minutes.

In blender, combine 1 1/2 cups peas and 1/4 cup hot broth mixture. Remove center part of blender top; cover blender and blend peas and broth mixture until pureed. Set remaining peas aside.

In microwave-safe 4-quart bowl, combine olive oil and rice. Cook, uncovered, in microwave on High for 1 minute. Stir in remaining hot broth mixture; cover bowl with vented plastic wrap and cook in microwave on Medium for 10 minutes, stirring once halfway through cooking.

Stir in pea puree; cover with vented plastic wrap and cook on Medium for 8 minutes longer or until most of liquid is absorbed.

Stir in Parmesan, salt, pepper and remaining peas. Garnish with more Parmesan cheese, if desired.

  • 2 pounds cabbage
  • 3 carrots (medium size)
  • 1/4 cup sour cream
  • 1/2 cup mayonnaise
  • 2 tablespoons cider vinegar
  • 1 teaspoon sugar

Directions
  • Remove the wilted, discolored and thick outer leaves of the cabbage and cut the remaining head into quarters. Remove the hard inner core from each quarter.
  • Thinly shred the cabbage to produce approximately 8 cups. Shred carrots and set shredded cabbage and carrots aside.
  • Combine sour cream, mayonnaise, vinegar, sugar, salt, and pepper in a large bowl and whisk until well blended.
  • Add shredded cabbage and carrots. Toss until cabbage and carrots are evenly coated.
  • Let the coleslaw stand at room temperature, uncovered, until cabbage is wilted, approximately 25 to 30 minutes. Toss 1 or 2 times while it is standing.
  • After it is wilted, place in the refrigerator to chill.
  • The coleslaw can be made the day before and refrigerated until ready to use.(A sprinkle of paprika perks up the appearance of the slaw.)

  • 1 cup margarine
  • 1 cup powdered sugar
  • 1 teaspoon vanilla
  • 1 3/4 cups flour
  • 1/2 teaspoon baking soda
  • 1 cup cherry chips
  • Variation - add ingredient below:
  • 1/2 cup oatmeal (reduce flour to 1 1/2 cups)
Directions
  • Preheat the oven to 350°F.
  • Note: This recipe does not call for any eggs.
  • Combine the margarine, powdered sugar and vanilla in a mixing bowl and beat until light and fluffy.
  • Add the flour and baking soda. Mix until well blended.
  • Add cherry chips and stir until well distributed.
  • On an ungreased cookie sheet, drop rounded teaspoons of dough, leaving at least an inch between to allow for spreading. Slightly flatten each cookie with the back of a spoon. Note: A rounded teaspoon makes a fairly small cookie. If a larger cookie is desired, use approximately 50% more dough.
  • Place in the preheated oven and bake for 8 to 9 minutes (11 to 13 minutes for larger cookies). Cookies are done when they start to brown slightly around the edges.
  • Remove from the oven and allow cookies to set on cookie sheet for 1 to 2 minutes to firm up slightly before removing. Remove and place on a wire rack to cool.

  • 3/4 cup buttermilk
  • 1 tablespoon chicken flavored instant boullion
  • 1/2 teaspoon oregano leaves
  • 1 pound skinned boneless chicken breasts, cut into strips
  • 1 1/4 cups unsifted flour
  • 1 teaspoon paprika
  • vegetable oil
Directions
In a large bowl combine buttermilk, boullion and oregano; let stand 10 minutes.

Stir in chicken. Let stand 30 minutes to blend flavors.

In a plastic bag, combine flour and paprika. Add chicken a few pieces at a time: shake to coat. Dip in buttermilk mixture again and then coat with flour again.

In a skillet, fry chicken strips in hot oil until golden on both sides. Drain on paper towels.

  • 1 package fudge brownie mix

  • 1 package chocolate chips

Directions
Mix and bake brownies according to package directions.

When brownies are done, sprinkle marshmallows over top and return to oven for 3 minutes.

Remove from oven and spread marshmallows over brownies using knife dipped in cold water; cool.

For topping, melt butter, chocolate chips and peanut butter in sauce pan. Stir in Rice Krispies.
