Ingredients
1 pound beef sirloin, cut into 2 inch strips
2 onions, halved and thinly sliced (medium)
1 pound fresh mushrooms, sliced
1 tablespoon canola oil
4 tablespoons reduced sodium soy sauce, divided
1 green pepper, cut into 1 inch strips
4 1/2 tablespoons cornstarch
Directions
In a large bowl, combine cornstarch and half of soy sauce until smooth. Add beef; stir to coat. In a large skillet or wok, stir-fry green peppers and onions in oil for 3 minutes. Add mushrooms. Cook and stir-fry for 3 to 5 minutes or until vegetables are tender and meat is no longer pink. Stir in remaining soy sauce. Serve with rice or noodles or eat as is. Makes 4 servings.
