Ingredients
1 box mochiko flour (sweet rice flour) (16 ounce box)
1 cup Sugar
1/2 teaspoon baking powder
2 Eggs Beaten
3/4 cup vegetable oil
1 1/2 cups skim milk
1 can tsubushian (Japanese unstrained red bean paste) (18 ounce can)
Directions
Preheat oven to 375 degrees. Grease muffin pans. Mix together dry ingredients. Stir in eggs, oil and milk. Scoop batter into muffin cups, filling 1/2 full. Place rounded teaspoon tsubushian into each muffin cup, then cover with remaining batter. Bake 30-40 minutes. Makes 24 muffins.
Note: If you're a peanut butter fan substitute for the tsubushian, yummy!
