Mochiko Muffins - Recipe

Directions
Preheat oven to 375 degrees. Grease muffin pans. Mix together dry ingredients. Stir in eggs, oil and milk. Scoop batter into muffin cups, filling 1/2 full. Place rounded teaspoon tsubushian into each muffin cup, then cover with remaining batter. Bake 30-40 minutes. Makes 24 muffins.

Note: If you're a peanut butter fan substitute for the tsubushian, yummy!

-1 box mochiko flour (sweet rice flour) (16 ounce box)
-1 cup Sugar
-1/2 teaspoon baking powder
-2 Eggs Beaten
-3/4 cup vegetable oil
-1 1/2 cups skim milk
-1 can tsubushian (Japanese unstrained red bean paste) (18 ounce can)
