Preheat oven to 350 degrees F. Spray the muffin tin with non-stick cooking spray.

Press a small amount of the hashbrowns into each muffin tin. Press potato up along the sides of the tin so that it forms an edible muffin cup. Place in oven and bake for about 15 minutes.

Meanwhile, beat the eggs and the milk together in a mixing bowl. Add the peppers, shallots, cheese, salt and pepper to the egg mixture and mix well.

Scoop a spoonful into the muffin tins on top of the potatoes until all the mixture is evenly divided between the muffin cups.

Place back in the oven to bake for 25 minutes or until the tops are fluffy and golden.

Remove from the oven and let sit for 5 minutes before serving.

"Loved the flavor the red pepper added! I only got 9 out of them but didn't use as much hashbrowns as the recipe called for. These were a little difficult to get out of the pan as some of the hashbrowns stuck to the bottom, but were very tasty anyway. Next time I might add some ham."

"I used this recipe for Christmas Day Brunch and was not satisfied with it. The hash brown "nests" did not work out; they are time consuming to make and they did not brown. I modified the recipe by using the remainder of the hash browns as a bottom and the Frittata mixture poured on top. The Frittata Mixture (egg, milk, peppers, etc.) was OK; not enough flavor. I think the mixture needed less eggs and more cheese and more spices. It was too bland. Overall I am disappointed in the results."
