Roasted Vegetables 4 Recipe

Ingredients
6 red potatoes, washed and cubed
1 red onions, quartered and separated
4 yellow squash, sliced (1/2 inch thick)
3 zucchini, sliced (1/2 inch thick)
1 red bell pepper, sliced
1/4 cup olive oil
2 tablespoons cajun seasoning (more or less to taste)
3 cloves garlic, chopped
1 tablespoon Dried Parsley
Directions
Preheat oven to 425. Combine prepared vegetables in a large bowl. Mix olive oil, cajun seasoning, parsley and garlic cloves and pour over vegetable mix tossing to coat vegetables evenly. (You may have to use 2 bowls to mix it all.) Grease a large roaster and pour the veggies in the roasting pan. Cook for about 40 minutes (stirring every 10 minutes) or until potatoes are done.
