| | Directions | | Preheat oven to 425. Combine prepared vegetables in a large bowl. Mix olive oil, cajun seasoning, parsley and garlic cloves and pour over vegetable mix tossing to coat vegetables evenly. (You may have to use 2 bowls to mix it all.) Grease a large roaster and pour the veggies in the roasting pan. Cook for about 40 minutes (stirring every 10 minutes) or until potatoes are done. |
