Roast Pork with Garlic and Rosemary Recipe

Ingredients
  • 3 cloves garlic
  • 1 center cut pork roast (with excess fat removed) (6 lb )
  • 1 teaspoon Salt
  • Freshly ground black pepper
  • 1/2 teaspoon ground cumin
  • 1 teaspoon dried rosemary
  • 1 medium-sized onion, peeled/halved
  • 3/4 cup water
Directions
1. Preheat the oven to 400. 2. Cut each garlic clove into several slivers. With a paring knife, create small pockets for the garlic slivers near the bone end of the meat and in the fat. Insert the slivers. 3. Mix the salt, pepper, cumin, and rosemary together and rub the meat with the mixture. Place the roast fat side down in a roasting pan. Add the onion halves to the pan. 4. Roast for 30 minutes; then turn the roast so that it is fat side up. Remove the melted fat from the pan. Cook for 30 minutes longer. 5. Remove the fat from the pan again and add the water, stirring to dissolve the solids adhering to the pan. Return the roast to the oven and reduce the oven temperature to 375. Continue roasting for 20 minutes, basting occasionally. 8 servings. Calories: 370.
