This is a quick breakfast bake that you can make a day in advance or whip it up right before baking. Use any breakfast meat you want or a combination of ham, bacon and sausage. It's delicious and easy, any way you make it.

  • 3 cups hashbrown potatoes
  • 1 pound sausage
  • 1 onion, finely chopped (optional)
  • 4 cups grated, cheddar cheese
  • 2 cups milk
  • 12 eggs, beaten
  • salt and pepper

Cover the bottom of a greased 9x13 baking dish with hashbrown potatoes.

Brown sausage and onions, if desired, in a skillet; drain.

Spread over potatoes.

Cover with cheese.

Mix eggs and milk; salt and pepper to taste. Pour over cheese.

Bake at 350 degrees F for 40-50 minutes.
