Slow Roasted Pork Shoulder Recipe

  • 1/4 cup salt
  • 1 teaspoon black pepper
  • 4 tablespoons smoked paprika
  • 1 tablespoon cayenne pepper
  • 3 pounds Boston butt
  • 1 cup Brown Sugar
  • 1 tablespoon red wine vinegar
  • 4 cloves garlic
  • 1/2 cup olive oil (to start)
  • 1 teaspoon Thyme
Combine salt, pepper, paprika, cayenne, sugar, vinegar, garlic, and thyme in food processor with just enough olive oil to make a paste. Rub on pork well. Cook for 3 to 3 1/2 hours, uncovered, at 325 or until internal temperature reaches 175.
