Lentil Tostadas (Vegetarian) Recipe

  • 8 slices whole wheat bread
  • 4 cups cooked lentils (not soupy, seasoned)
  • 1 1/2 cups dressing
  • 4 cups chopped lettuce
  • 2 cups chopped tomatoes
  • 1/4 cup chopped green onions
  • Dressing
  • 1/2 cup Mayonnaise
  • 1 cup buttermilk
  • 1/4 cup chopped parsley or 2 T dried parsley
  • 1/4 cup chopped chives or 1/4 teaspoon onion powder
  • 1 teaspoon lemon juice
  • 1/4 teaspoon salt
Cook lentils-see directions below. Prepare vegetables and dressing. Toast bread on cookie sheet under broiler. Place one slice of toast on a plate for the base. Spoon lentils over toast, cover with dressing, mound up lettuce, tomatoes and onions, top with more dressing. Makes 8


2 C. lentils

1 C. onions, sautéed

6 C. boiling water

1 1/2 tsp. salt

Examine and wash lentils. Add to rapidly boiling water. Add sautéed onions and boil gently for 30 minutes. Add salt and cook until tender, about 5-10 minutes longer.
