Strawberry Long Cake Recipe

Ingredients
  • 1 quart fresh sweetened strawberries OR
  • 1 quart berries from freezer, thawed
  • 1 cup flour plus 2 tablespoon reserved
  • 2 teaspoons baking powder
  • 3 tablespoons sugar, plus 1/4 cup reserved
  • 1/4 teaspoon salt
  • 1/4 cup shortening
  • 1 egg, beaten
  • 1/3 cup milk
  • 1/4 cup butter
Directions
Sift flour, baking powder, sugar and salt. Add shortening and combine egg and milk. Stir into flour mixture. Mix well, spread dough in well greased 7"x 12" pan. Spread the berries with juice over top of dough. Cream 1/4 cup butter, 1/4 cup sugar and 2 Tbsp flour. Drop here and there over berries. Bake 30 minutes in moderate oven, 350°. Serve warm.
