White As Snow Cake with Chocolate Cream Cheese Frosting Recipe

Ingredients
  • CAKE
  • 2 1/2 cups sifted flour
  • 4 1/2 teaspoons baking powder
  • 1 teaspoon Salt
  • 1 1/2 cups sugar
  • 1/2 cup shortening
  • 1 cup milk
  • 4 egg whites
  • 1 teaspoon vanilla
  • CHOCOLATE CREAM CHEESE FROSTING
  • 2 1/2 square unsweetened baking chocolate (2 1/2 ounce square)
  • 1 package cream cheese (3 ounce pkg)
  • 1/4 cup milk
  • 3 - 3 1/2 cup powdered sugar
Directions
Sift dry ingredients. Add shortening and milk and beat well. Add egg whites (unbeaten) and vanilla and beat. Spread in a greased and floured 9 x 13 pan and bake at 350° for 30 minutes. Cool and frost with Chocolate Cream Cheese Frosting. To make frosting: In a medium microwave safe bowl, place chocolate, cream cheese and milk. Microwave on High (100%) for 1 1/2 minutes, stir. Microwave on high for an additional 30 seconds to a minute, until soft and smooth when stirred. Gradually add powdered sugar, beating until smooth. Makes 2 cups.
