Raw Apple Cake (German Apple Cake) Recipe

Ingredients
2 cups sugar
2 Eggs
1/2 cup oil
2 cups flour
1 each salt & soda (1 teaspoon EACH)
2 teaspoons cinnamon
4 cups diced raw apples
1/2 - 1 cup chopped nuts
Dos icing
1 package cream cheese (8 ounce pkg)
3 tablespoons melted butter
1 teaspoon vanilla
1 1/2 cups confectioners sugar
Directions
Beat together sugar, eggs and oil, Sift together flour, salt, soda and cinnamon. Add dry ingredients to wet mixture. Add apples and nuts. Pour into a greased 9 x 13" pan. Bake in a 350° oven 45 minutes. Linda Weschler is submitting this recipe that she received from Elsie after she tasted it on a Sunday morning in the Cana Class. Ummmmm good. Can be served plain or with whipped cream. Do Balch adds an icing as seen above.
