Cheesy Potato Soup with Ham Recipe

Ingredients
  • 1 1/2 cups carrots, peeled, chopped
  • 5 cups potatoes, peeled, chopped
  • 1 1/2 cups celery, chopped
  • 1 teaspoon salt
  • 6 cups water
  • 1 can evaporated milk (12 oz can)
  • 2 tablespoons chopped parsley
  • 1 cup skim milk
  • 1 pound reduced fat processed cheese, cubed
  • 2 cups ham, diced (optional)
  • 1/2 teaspoon black pepper

  • In a 5 quart pot, combine carrots, potatoes, celery, salt and water.
  • Boil 20 minutes.
  • Remove from stove & slightly mash potato mixture.
  • Stir in evaporated milk, parsley, milk, cheese, ham, & black pepper.
  • Return to stove & heat until bubbly.
