Orange Cookies 10 Recipe

Ingredients
  • 2/3 cup oleo, softened
  • 3/4 cup sugar
  • 1 egg, lightly beaten (large)
  • 1/2 teaspoon vanilla
  • 1/2 cup orange juice
  • 1 box Instant vanilla pudding, do not prepare! (small box)
  • 2 cups flour
  • 1/2 teaspoon Salt
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 orange rind, grated (save half for frosting) (large)
  • 2 1/2 tablespoons oleo
  • 1 1/2 cups confectioners sugar
  • 1 1/2 tablespoons orange juice
  • 2 tablespoons orange rind, grated
Directions
Mix softened oleo, sugar, egg, vanilla and orange juice. In separate bowl, stir together instant pudding mix, flour, salt, baking powder and soda. Add mixture to butter and sugar mixture. Add orange rind. Bake about 8-10 minutes at 375° or until lightly browned. Frost cookies while warm
