Ingredients
8 ounces chopped dates
1 beaten egg
1 cup white sugar
2 cups crispy rice cereal
flaked coconut
Directions
Cook dates, egg and sugar over low heat about 10 minutes, stirring constantly. This should result in thick paste consistency. Remove from heat and add cereal. Mix well. Cool until able to handle. Form into small balls and roll in flaked coconut. Set on wax paper to cool. (Note -- can also line a shallow pan with wax paper, sprinkle with coconut and press date mixture lightly into pan. Top with more coconut pressed lightly into bars. Cool and cut into desired sized bars.) Store in air tight container.
