Vanishing Oatmeal Cookies Recipe

Cake-like oatmeal cookies that you won't even be able to freeze, even though they freeze perfectly. These cookies will be gone before you know it.

  • 1 cup butter, softened
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • 1 1/2 cups all purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 3 cups quick oats (or old-fashioned oats), uncooked
  • 1 cup raisins or chocolate chips (optional)

  • Preheat the oven to 350ºF.
  • Beat together the butter and sugars until creamy.
  • Add the eggs and vanilla; beat well.
  • Combine the flour, baking soda, cinnamon, and salt; then add this dry mixture to the creamed mixture and blend well.
  • Stir in the oats and raisins or chocolate chips, if desired.
  • Drop the dough by teaspoonfuls onto an ungreased cookie sheet, and bake for 10-12 minutes or until golden brown.
  • Cool on wire racks before serving.
