Ingredients
  • 1/2 cup butter
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 1/3 cup peanut butter
  • 1 egg, lightly beaten
  • 1/2 teaspoon vanilla
  • 1/2 teaspoon baking soda
  • 1 cup flour
  • 1 cup oatmeal
  • FROSTING: (optional)
  • 1 cup powdered sugar
  • 1 cup peanut butter
  • 4 tablespoons half and half

  • Cream together the butter, sugar, brown sugar, and peanut butter.
  • In a small bowl, beat the egg and stir in the vanilla and baking soda. Mix this into the creamed mixture.
  • Stir in the flour; then stir in the oatmeal.
  • Place in a buttered and floured 9x13-inch baking pan. Bake at 350ºF for 20-25 minutes; cool.
  • For frosting, combine powdered sugar, peanut butter, and half and half. The mixture will be thick. Thin it with additional half and half until desired consistency.
  • Frost the cooled bars, if desired, and serve.
