Cranberry Orange Biscotti 2 Recipe

  • 2 1/2 cups flour + 1 tablespoon.
  • 1 cup Sugar
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon Salt
  • 3 Eggs
  • 1/4 cup orange juice concentrate
  • 1 cup craisins
  • 1 cup chopped nuts, optional
Whisk together dry ingredients. In a separate bowl, beat eggs until frothy and add orange juice concentrate. Fold into dry ingredients. Add craisins and nuts. Shape dough into 2 long logs on a cookie sheet and slightly flatten the edges all along with your fingers to achieve the biscotti shape. Bake 20-25 minutes at 350° F, or until golden in color. Cool slightly and cut into 1/2 inch slices. Space slices slightly apart and upright, and then toast them again in 350 oven for 10 minutes.
