Frosted Carrot Bars Recipe

Ingredients
  • 2 cups flour
  • 2 teaspoons soda
  • 4 eggs
  • 1 cup oil
  • 1 teaspoon salt
  • 1 teaspoon cinnamon
  • 2 cups sugar
  • 3 cups carrots, peeled, grated
  • FROSTING:
  • 8 tablespoons butter, softened
  • 1 package cream cheese, softened (8 ounce pkg)
  • 3 1/2 cups powdered sugar
  • 1 teaspoon vanilla

In a small bowl, sift flour and soda.

In a large bowl, beat eggs; add oil, salt, cinnamon and sugar.

Add flour mixture.

Fold in carrots.

Pour into lightly greased jelly roll pan. Bake at 350° for 30 minutes.

Cool and frost.

For frosting, combine ingredients for frosting and then frost cooled bars.
