Chewy Biscotti Recipe

  • 2 cups granulated sugar
  • 1/2 cup sliced almonds
  • 1/3 cup canola oil (or other vegetable oil)
  • 2 tablespoons almond extract
  • 2 egg whites (large)
  • 1 egg (large)
  • 2 1/2 cups + all purpose flour
  • 2 teaspoons baking powder
  • Cooking spray
Preheat oven to 375. Combine sugar, almonds, oil, almond extract, egg whites and egg in large bowl. Combine 2 1/2 cups flour and baking powder. Gradually add flour mixture to sugar mixture, beating until well blended (dough will be soft). Turn dough onto a floured surface and knead until it can be easily handled. Divide into two long sections and place side by side on cookie sheet. Flatten to 3/4" thickness. Bake at 375 for 20-25 minutes. Cool slightly and carefully remove from baking sheet. Place on solid surface and cut each rectangle into 1" slices. Slices may then be cut in half for smaller cookie bars. Yield: 2 dozen .

Whole wheat flour may be substituted for half or all of the flour.
