Servings: Makes approximately 2½ to 3½ dozen cookies, depending on the size of the cookie.
Ingredients
  • 1 cup flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup butter, unsalted
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 1 egg, lightly beaten
  • 1 teaspoon vanilla
  • 1 cup oatmeal
  • 1 cup coconut
  • 1 cup rice krispie cereal

  • Sift flour, baking powder and soda, and salt together in a medium bowl.
  • In a large mixing bowl, cream butter and sugars until light.
  • Add egg and vanilla. Beat until smooth.
  • Beat in flour mixture.
  • Fold in oatmeal, coconut and cereal.
  • Bake at 375° for 12-15 minutes.
