Zucchini Squash Onion Tomato Casserole Recipe

  • 1/2 stick butter
  • 2 zucchinis, sliced (medium)
  • 2 squash, sliced (medium)
  • 1 onion, cut into rings (large)
  • 2 tomatoes, sliced (medium)
  • 1 teaspoon oregano
  • Salt, to taste
  • Pepper, to taste
  • 3/4 cup Parmesan Cheese
Melt one-half stick of butter on bottom of 13x9" pan. Layer zucchinis, squash, onion rings and tomatoes. Top with oregano, salt, pepper and Parmesan cheese. Bake, covered, at 350° for 50 minutes and then uncovered for 10 minutes longer. If the pan is filled high, bake even longer.
