Ingredients
2 pounds pumpkin
5 dried shrimp (optional)
1 cup water
1 tablespoon brown sugar
1 1/2 tablespoons Shoyu
1 1/2 grated ginger
1 tablespoon Sake
1 1/2 tablespoons oil
Directions
Remove seeds from pumpkin and cut into two inch pieces. In a large saucepan combine all ingredients except pumpkin. Cover and bring to a boil; simmer for five minutes. Add pumpkin, tossing occasionally, cook uncovered for about ten minutes or until pumpkin is tender and liquid evaporates.
