Berry Lettuce Salad Recipe

Ingredients
  • 2 heads leaf lettuce (green, red, or both)
  • 1/2 cup monterey jack cheese, cubed
  • 1/2 cup candied pecans (see directions)
  • 1/3 cup sunflower seeds
  • 1 cup strawberries or blueberries (or both)
  • Dressing
  • 3/4 cup sugar
  • 1/3 cup white vinegar
  • 1 teaspoon Dry Mustard
  • 3/4 teaspoon salt
  • 1 cup canola oil
  • 1 1/2 tablespoons poppy seeds
  • Grated onion to taste
Directions
To candy pecans, layer a pan with sugar and add a single layer of pecans. Over a medium heat, stir until well coated, then remove from heat. Whisk the dressing ingredients. Combine salad ingredients in a large bowl. Add dressing immediately before serving so the salad doesn't get mushy.
