Vegetable Rice Ring Recipe

Ingredients
  • 2 cups cooked rice
  • 1/2 cup Italian salad dressing
  • 1/2 cup Mayonnaise
  • 1/2 - 1 cup Sliced Radishes
  • 1 cucumber, seeded and chopped (Medium)
  • 2 Tomatoes, peeled, seeded and chopped (Small)
  • 1 green pepper, chopped
  • 1/2 cup chopped celery
  • 1/4 cup Chopped Onion - optional
  • Leaf Lettuce
  • 1 pint cherry tomatoes
Directions
Cook rice a day ahead and marinate in Italian dressing. Add mayonnaise to rice mixture and stir well. Fold all the vegetables into rice mixture. Press into 5 1/2 C. mold, cover, and let set for at least 3 hours. To serve, unmold onto lettuce and if it's a ring mold, put tomatoes in the middle. Serves 8 - 10 people.
