Marinated Vegetable Mix Recipe

  • 1 can French style green beans, drained
  • 1 can white shoepeg corn, drained
  • 1 can Lasueur peas, drained
  • 1 green pepper, diced (small)
  • 1 jar pimento, diced (small jar)
  • 1 cup diced Celery
  • 1 onion, diced (small)
  • 3/4 cup white wine vinegar
  • 3/4 cup sugar
  • 1 teaspoon Salt
  • 1 teaspoon pepper
Combine first seven ingredients in a large bowl. In a separate bowl, mix vinegar, sugar, salt and pepper. Stir well until the sugar is dissolved. Pour over vegetables and mix well. Refrigerate overnight until serving. (I like to double the recipe and use a variety of beans -- black, kidney, cannellini, etc.)
