I Can't Believe It's Carrots Casserole Recipe

Ingredients
  • 2 cups mashed cooked carrots
  • 1 stick margarine
  • 1 teaspoon baking powder
  • 1/4 teaspoon cinnamon
  • 3 tablespoons flour
  • 2/3 cup sugar
  • 3 beaten eggs
Directions
NOTE: The original recipe calls for 1 cup sugar but that makes it very sweet. You can adjust sugar to suit your taste.

Melt margarine in warm mashed carrots. Mix dry ingredients together and add to carrots, mixing well. Add beaten eggs to other ingredients. Pour into baking dish and bake at 400 for 15 minutes. Reduce heat to 350 and bake for an additional 35-45 minutes until a knife inserted in the middle comes out clean.
