  • 1 1/2 pounds fresh Brussels sprouts
  • 2 cups carrots
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • salt and pepper, to taste

Preheat oven to 400 degrees. F.

Remove outer leaves and trim off bottom of Brussels sprouts. Cut in half.

Cut carrots into small pieces.

Spread Brussels sprouts and carrots onto baking sheet. Drizzle with olive oil, garlic and season with salt and pepper. Toss to coat.

Bake for 18-22 minutes.

"These Brussels sprouts were OK. I loved the color combination, but seemed a little dry to me. Next time I will use more olive oil and add some balsamic vinegar to give it a little oomph!"
