Oven Roasted Root Vegetables Recipe

Ingredients
  • 2 sweet potatoes, sliced
  • 3 fresh beets, sliced
  • 2 Yukon Gold potatoes, sliced
  • 1/2 onion, diced (large)
  • 2 cloves garlic, minced
  • 1/3 cup olive oil
  • 1/2 cup Parmesan cheese
Directions
Toss all vegetables in a bowl with olive oil. Lay in a single layer in a 9x13 in. baking pan. Sprinkle cheese on top and bake at 350° for 35 minutes or until vegetables are tender.
