  • 1 cup mayonnaise
  • 1 teaspoon Dijon mustard
  • 1 clove garlic, minced
  • 1/4 cup freshly grated Parmesan cheese
  • 1 tablespoon red wine vinegar
  • 1 tablespoon freshly squeezed Lemon juice
  • 3/4 teaspoon Worcestershire sauce
  • 3/4 teaspoon tabasco sauce
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • Romaine lettuce
  • Iceberg lettuce

  • Mix all the dressing ingredients until smooth. Adjust seasonings to taste.
  • Tear romaine and iceberg lettuce into bite-size pieces.
  • Toss the lettuce with the dressing and add croutons, tomatoes, olives, and Parmesan cheese as desired.

"I love Caesar salad but had never made my own dressing because so many recipes called for anchovies and that doesn't sound good to me but this dressing did not call for it. I thought it turned out great. I will have enough for a couple of more salads. I will definitely make this dressing again."
