Chopped Greek Salad with Chicken Recipe

A healthy Greek salad that is a lunch fit for a king. It is perfect for leftover or rotisserie chicken.

  • 3 cups Romaine lettuce, shredded
  • 1 tomatoes, chopped
  • 1/2 cucumber, peeled, seeded, chopped
  • 1/4 cup red onion, finely chopped
  • 5 kalamata olives, halved
  • 2 tablespoons feta cheese, crumbled
  • 1 tablespoon red-wine vinegar
  • 1/4 teaspoon freshly ground pepper
  • 2 ounces cooked chicken, diced

Toss together lettuce, tomato, onions and chicken.

Top with feta and olives.

Drizzle with vinegar. Season with ground pepper, if desired.

Serve with crackers.
