Easy Vegetable Pasta Salad Recipe

A super easy pasta salad full of crisp and crunchy vegetables. With a little touch of saltiness with the addition of black and green olives, this salad will soon become a favorite. It goes great with grilled burgers, chicken, steak and chops.

  • 1 pound rotini pasta
  • 1/2 head cauliflower - cut into bite size pieces
  • 1 pound broccoli - chopped
  • 1 can ripe olives - drained (small can)
  • 2/3 cup whole green olives
  • 1 can sliced water chestnuts - drained (8 ounce can)
  • 1/2 each green, red and yellow peppers - chopped (medium)
  • 1 pint cherry tomatoes - halved
  • 1 bottle Italian dressing (16 ounce bottle)

  • Combine all vegetables and olives in a large bowl. Toss to mix.
  • Pour dressing over top. Toss gently. Chill at least 1 - 2 hours before serving. Keeps well in the refrigerator so it can be made ahead.
