Mandarin Rice Salad Recipe

  • 1 cup wild rice
  • 1 cup mandarin oranges
  • 1/4 cup chopped green onions
  • 1/2 cup dried cranberries
  • 1/4 cup pecans, toasted
  • 1/4 cup freshly chopped mint
  • 1/2 cup orange juice
  • 1/4 cup Oil
  • 1 teaspoon Salt
  • Dash of pepper
Cook wild rice according to package directions. In a large bowl, toss together cooked wild rice, mandarin oranges, chopped green onions, dried cranberries, toasted pecans and chopped mint. In a small bowl, combine orange juice, oil, salt and pepper. Pour orange juice mixture over wild rice mixture. Toss until evenly coated. Makes about 6 servings.

*To toast, place pecans in a single layer on a baking sheet. Bake at 350° for approximately 10 minutes or until nuts are golden brown.
